On rainy days, I get the craving to have fried snacks, especially Kerala snacks. In Kerala, it&#8217;s quite a normal routine to serve some kind of snacks along with tea\u00a0in the evening.<\/p>\n<p>Yesterday, it had been drizzling the whole day. I worked from home and I sat with my laptop working away facing my backyard. I had hung the bird feeders with seeds in it\u00a0and in no time my backyard got busy with cute little birds enjoying their food and being happy. Birds and drizzle, I kept staring at the backyard,\u00a0a peaceful vibe I felt. Towards the evening, I had the urge to have some kind of Kerala snacks. So many Kerala evening snacks lined up in front of me: <a href=\"http:\/\/www.thasneen.com\/cooking\/plantain-fritters-pazham-pori-recipe\/\" target=\"_blank\" rel=\"noopener noreferrer\">pazhampori<\/a>, <a href=\"http:\/\/www.thasneen.com\/cooking\/traditional-south-indian-fried-snack-uzhunnu-vada-or-medu-vada\/\" target=\"_blank\" rel=\"noopener noreferrer\">medu vada<\/a>, <a href=\"http:\/\/www.thasneen.com\/cooking\/unnakaya-stuffed-plantain-fry\/\" target=\"_blank\" rel=\"noopener noreferrer\">unnakaya<\/a>, <a href=\"http:\/\/www.thasneen.com\/cooking\/onion-fritters-onion-vada-or-ulli-vada\/\" target=\"_blank\" rel=\"noopener noreferrer\">ullivada<\/a>, <a href=\"http:\/\/www.thasneen.com\/cooking\/lentil-fritters-or-parippu-vada-south-indian-fried-snack\/\" target=\"_blank\" rel=\"noopener noreferrer\">parippu vada<\/a>, <a href=\"http:\/\/www.thasneen.com\/cooking\/banana-pepper-fritters-or-mulagu-bhaji\/\" target=\"_blank\" rel=\"noopener noreferrer\">mulagu bhaji<\/a>, the list just goes on&#8230;<\/p>\n<p>When I get the craving, I cannot help but succumb to it. I wanted to try a new snack that I hadn&#8217;t tried in my kitchen and not blogged about. I was reminded of Mutta Surka which my mom used to make, a very simple savory snack made with rice flour, coconut and egg. Last Summer, my mom bought a pan with several cavities in it (Paniyaram pan) from India. It had been sitting idle in my kitchen cabinet since then. Mutta surka is made in that pan, I then decided to make this snack. It was quite easy to make and when I try something for the first time, I feel the greatest joy.<\/p>\n<p>Mutta Surka turned out delicious, you can enjoy many in just one sitting. This is usually enjoyed as an evening snack with chai. Combine well.<\/li>\n<li class=\"instruction\">Gradually add water and combine well using a fork till a slightly thick batter has formed. Don&#8217;t make it too thick nor too watery. I&#8217;ve added almost 1 cup water to get the right consistency.<\/li>\n<li class=\"instruction\">Place the paniyaram pan, this pan has cavities over medium heat. Let turn hot.<\/li>\n<li class=\"instruction\">Add 1 tsp oil to each cavity, let turn hot.<\/li>\n<li class=\"instruction\">Pour 1 tbsp of batter onto each cavity.<\/li>\n<li class=\"instruction\">Cook for a few minutes.<\/li>\n<li class=\"instruction\">Using a fork or skewer flip it over to the other side and cook till golden in color.<\/li>\n<li class=\"instruction\">[b]Note[\/b]: to get the round shape: you should flip it over when the center is slightly watery, if the center has cooked well the base will be flat.<\/li>\n<li class=\"instruction\">Transfer to a plate.<\/li>\n<li class=\"instruction\">Enjoy these savoury mutta surka while it&#8217;s warm along with chai.<\/li>\n<li class=\"instruction\">Turn this into a complete meal, enjoy with chicken, mutton or beef curries, delish!<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div>\n<div class=\"ERNotesHeader\">Notes<\/div>\n<div class=\"ERNotes\">You can roast the rice flour taken in a non-stick pan over stove top till the flour turns aromatic and starts to turn light golden in color.
