As this is the first challenge, she made it easy by asking the contestants to blog about a dish that represents them. When I read about this, I suddenly screamed voila, it&#8217;s darn easy and I can do this. Believe me that turned out to be a wrong scream. When I started to think about a dish, which is totally me, many dishes lined up in front of me and there was a huge conflict between the dishes. When I almost got settled on one dish, another one came to me and asked me: &#8216;don&#8217;t you think I am your type&#8217; and then the next one popped out and the war continued for a while. Soon, I was seen compromising with each one of the dishes, as I don&#8217;t want to unfriend them or break their hearts. I love all the dishes unconditionally&#8230;<\/p>\n<p>Growing up in Kerala, I&#8217;ve enjoyed seafood a lot. Seafood was served almost every day in my house, for lunch and dinner. In my hometown, we get fresh, catch of the day fishes, which is brought to the house by fish vendors. Among them, shellfish has been my favorite, especially Shrimp. Even now I remember how I used to butter up the fish vendors in advance to bring the fresh shrimp for me. And it always worked, they never failed to bring the fresh ones.<\/p>\n<p>My favorite way of devouring shrimp is by deep-frying it after seasoning it with homemade spices. However, for this contest I am going to submit the recipe for &#8216;Shrimp Biryani&#8217;. Biryani is yet another famous dish in India. I doubt, if there would be any special occasions without biryani. Biryani could be referred as the dish, which is served during the time of happiness and special occasions. If you stop by my house during special occasions or festival season, you are guaranteed to be treated with homemade biryani made by my mom.<\/p>\n<p>Shrimp and Biryani totally represent me, shrimp being my favorite and since I am a person who loves celebration and special occasions, biryani is my type of dish. When other dishes confronted with me, shrimp biryani won over my taste buds hands down.<\/p>\n<p>This recipe was inspired from Vahchef.<\/p>\n<p><strong>Shrimp Biryani:<\/strong><\/p>\n<p><strong><a href=\"http:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2010\/01\/IMG_5020-copy.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2383\" title=\"Shrimp Biryani\" src=\"http:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2010\/01\/IMG_5020-copy.jpg\" alt=\"\" width=\"475\" height=\"713\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2010\/01\/IMG_5020-copy.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2010\/01\/IMG_5020-copy-199x300.jpg 199w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/a><\/strong><\/p>\n<p><strong>For making homemade Biryani Masala<\/strong><\/p>\n<ul>\n<li>Cloves- 10<\/li>\n<li>Black Cardamom- 4<\/li>\n<li>Mace- 3<\/li>\n<li>Dried Bay leaves- 2<\/li>\n<li>Green cardamom-10<\/li>\n<li>Cinnamon-3 inch slice<\/li>\n<li>Whole black Peppercorns- 10<\/li>\n<li>Black cumin- 1\/2 tsp<\/li>\n<li>Fried onion- 1\/4 cup<\/li>\n<li>Chili powder-1 tbsp<\/li>\n<li>Coriander powder- 2 tbsp<\/li>\n<li>Cumin powder-1 tbsp<\/li>\n<li>Turmeric powder-1\/4 tsp<\/li>\n<li>Fennel powder- 2 tsp<\/li>\n<\/ul>\n<p><strong>Instruction<\/strong><\/p>\n<ul>\n<li>Grind the above ingredients into a fine powder and store it in an air-tight container.<\/li>\n<li>This biryani masala can be stored for a few months.<\/li>\n<li>This can be used for making all kinds of biryani: Chicken, lamb, Fish, vegetable, etc<\/li>\n<\/ul>\n<p><strong>For Cooking Rice<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Basmati Rice- 1 1\/2 cups<\/li>\n<li>Cardamom- 3<\/li>\n<li>Cinnamon- 2-inch piece<\/li>\n<li>Cloves- 3<\/li>\n<li>Bay leaves- 2<\/li>\n<li>Fennel seeds- 1 tsp<\/li>\n<li>Water- 2 1\/2 cups<\/li>\n<li>Salt- 1 1\/4 tsp<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ul>\n<li>Soak the basmati rice in water for 30 minutes.<\/li>\n<li>In a large pot, add the water and the spices to it, let water come to a rolling boil.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-2384 size-full\" title=\"Making Rice for Biryani\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2010\/01\/making-rice-for-biryani.jpg\" alt=\"\" width=\"475\" height=\"317\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2010\/01\/making-rice-for-biryani.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2010\/01\/making-rice-for-biryani-300x200.jpg 300w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/p>\n<ul>\n<li>Season the water with salt.<\/li>\n<li>Add the strained, soaked rice to the boiling water. 85-90%, remaining cooking has to be done along with the shrimp masala.<\/li>\n<li>If there is any water in the rice, strain the water and keep aside.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" tsp<\/li>\n<li>Chili powder- 1\/2 tsp<\/li>\n<li>Turmeric powder- 1\/4 tsp<\/li>\n<li>Coriander powder- 1 tsp<\/li>\n<li>Salt- 1 tsp<\/li>\n<li>Oil- just enough for shallow frying the shrimp<\/li>\n<\/ul>\n<p><strong>Instruction<\/strong><\/p>\n<ul>\n<li>Devein, de-shell, and clean the shrimp under running water.<\/li>\n<li>Add ginger-garlic paste, turmeric powder, chili powder, coriander powder and salt to the shrimp, marinate for 15 minutes.<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-2388 size-full\" title=\"Shrimp Marinated\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/p>\n<ul>\n<li>In a non-stick pan, add the oil, when it is heated through, add the shrimp and shallow fry in batches till the shrimp turns golden the rice<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Oil- used for shallow frying the shrimp<\/li>\n<li>Yogurt- 1 1\/2 cups<\/li>\n<li>Green chilies, chopped- 1 tbsp<\/li>\n<li>Cilantro, chopped- 1\/4 cup<\/li>\n<li>Mint, chopped- 1\/4 cup<\/li>\n<li>Prepared Biryani Masala- 2 tbsp<\/li>\n<li>Salt- 1\/2 tsp<\/li>\n<li>Fried shrimp- 1 lb<\/li>\n<li>Cooked Rice- 1 1\/2 cups<\/li>\n<\/ul>\n<p><strong>For Garnish<\/strong><\/p>\n<ul>\n<li>Fried Onion, homemade or store-bought- 1\/2 cup<\/li>\n<li>Cilantro, chopped-1\/4 cup<\/li>\n<li>Saffron, soaked in 2 tbsp milk- 2 pinches<\/li>\n<\/ul>\n<p><strong>Instruction<\/strong><\/p>\n<ul>\n<li>Heat a wide non-stick pot over medium heat, add the oil used for frying the shrimp.<\/li>\n<li>Add green chilies, cilantro, mint, salt, biryani masala and combine everything.<\/li>\n<li>Cook for 2 minutes.<\/li>\n<li>Now, add the fried shrimp, combine well.<\/li>\n<li>Add the yogurt to the shrimp, cook for 2 ingredients in a bowl.<\/li>\n<li>Serve with Shrimp Biryani.<\/li>\n<\/ul>\n<p><strong>Tips<\/strong><\/p>\n<ul>\n<li>This recipe might look like a lengthy one, believe me it&#8217;s not that hard as it seems.<\/li>\n<li>Prepare the homemade Biryani masala the previous day and this can be stored for several months and can be used for making any kinds of biryani.<\/li>\n<li>On the day of making this, you just have to make the rice and the shrimp masala.<\/li>\n<li>You could simultaneously cook the rice and fry the shrimp.<\/li>\n<li>After frying the shrimp, start making the shrimp class=\"instructions\">\n<div class=\"ERSeparator\">[b]Making The Biryani Masala[\/b]<\/div>\n<ol>\n<li class=\"instruction\">Grind the above ingredients into a fine powder and store it in an air-tight container.<\/li>\n<li class=\"instruction\">This biryani masala can be stored for a few months.<\/li>\n<li class=\"instruction\">This can be used for making all kinds of biryani: Chicken, lamb, Fish, Vegetable etc<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]For Making Rice[\/b]<\/div>\n<ol>\n<li class=\"instruction\">Soak the basmati rice in water for 30 minutes.<\/li>\n<li class=\"instruction\">In a large pot, add the water and the spices to it, let the water come to a rolling boil.<\/li>\n<li class=\"instruction\">Season the water with salt.<\/li>\n<li class=\"instruction\">Add the strained, soaked rice to the boiling water and cook covered over medium heat.<\/li>\n<li class=\"instruction\">Cook the rice to only 85-90%, remaining cooking has to be done along with the shrimp masala.<\/li>\n<li class=\"instruction\">If there is any water in the rice, strain the water and keep aside.<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]Frying[ the shrimp\/b]<\/div>\n<ol>\n<li class=\"instruction\">Devein, de-shell and clean the shrimp under running water.<\/li>\n<li class=\"instruction\">Add ginger-garlic paste, turmeric powder, chili powder, coriander powder and salt to the shrimp. Marinate the shrimp for 15 minutes.<\/li>\n<li class=\"instruction\">Place a non-stick pan over medium heat, add the oil.<\/li>\n<li class=\"instruction\">Let oil turn hot, add the shrimp and shallow fry in batches, for 4 minutes.<\/li>\n<li class=\"instruction\">Don\u2019t over fry the shrimp.<\/li>\n<li class=\"instruction\">Remove the shrimp from the oil and keep aside.<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]For Making The Masala And Mixing[\/b]<\/div>\n<ol>\n<li class=\"instruction\">Heat a wide non-stick pot over medium heat, add the oil used for frying the shrimp.<\/li>\n<li class=\"instruction\">Add green chilies, cilantro, mint, salt, biryani masala and combine everything.<\/li>\n<li class=\"instruction\">Cook for 2 minutes.<\/li>\n<li class=\"instruction\">Now, add the fried shrimp, combine well.<\/li>\n<li class=\"instruction\">Add the yogurt to the shrimp, cook for 2 minutes.<\/li>\n<li class=\"instruction\">Evenly spread the shrimp masala.<\/li>\n<li class=\"instruction\">Add the cooked rice on top of the shrimp masala and spread the rice.<\/li>\n<li class=\"instruction\">Garnish with fried onions, cilantro, and saffron.<\/li>\n<li class=\"instruction\">Cover the pot with it a tight lid and cook for 10 minutes, cook over low-medium heat.<\/li>\n<li class=\"instruction\">While serving, combine the rice and shrimp masala together and serve with Raita.<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]Making Raita[\/b]<\/div>\n<ol>\n<li class=\"instruction\">Combine all the above ingredients in a medium bowl.<\/li>\n<li class=\"instruction\">Serve with Shrimp Biryani.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div>\n<div class=\"ERNotesHeader\">Notes<\/div>\n<div class=\"ERNotes\">Prepare the homemade Biryani masala the previous day and this can be stored for several months and can be used for making any kinds of biryani.[br] On the day of making this, you just have to make the rice and the shrimp masala.
