Eggplant cooked with\u00a0spices and freshly squeezed tamarind. Dice them into chunks and place them in a bowl filled with water so that they won&#8217;t turn brown.<\/li>\n<li class=\"instruction\">Soak the fresh tamarind in 3 tbsp warm water for 5 minutes. Using your fingers, squeeze the soaked tamarind in water, drain the juice and discard the skin. Keep aside the juice.<\/li>\n<li class=\"instruction\">Place a saucepan over medium heat, add oil. Let oil turn hot.<\/li>\n<li class=\"instruction\">Add mustard seeds, let it splutter.<\/li>\n<li class=\"instruction\">Add whole dry red chilies and curry leaves, saute for a second.<\/li>\n<li class=\"instruction\">Add onion, season with salt and cook till translucent.<\/li>\n<li class=\"instruction\">Add diced eggplant and chopped tomatoes.<\/li>\n<li class=\"instruction\">Add 1\/4 cup water and cook covered till eggplants have turned tender.<\/li>\n<li class=\"instruction\">Add chili powder, turmeric powder, cumin powder, coriander powder and salt.
