For my family, it\u2019s also a time for cherished culinary traditions. One dish that my mom makes regularly during Ramadan is <strong>Nombu Kanji<\/strong>, a comforting and nourishing porridge that we enjoy for <strong>Iftar<\/strong>. This kanji is light yet filling, soothing the stomach after a long day of fasting, and packed with flavour from coconut and warm spices.<\/p>\n<p>Unlike other porridges, our <strong>Nombu Kanji<\/strong> is made with <strong>rice, coconut, and aromatic spices<\/strong> that make it incredibly refreshing and easy to digest. Don&#8217;t grind to a smooth paste, this is to extract the coconut milk out of the grated coconut.<\/li>\n<li class=\"instruction\">Pour the ground coconut to a strainer and extract the coconut milk into a bowl.<\/li>\n<li class=\"instruction\">Again add the coconut back to the blender jar &amp; add 1 cup water, grind it.<\/li>\n<li class=\"instruction\">Extract the coconut milk to the bowl.<\/li>\n<li class=\"instruction\">Add 1\/2 cup water, squeeze the grated coconut and strain the coconut milk.<\/li>\n<li class=\"instruction\">Total water added is 2 1\/2 cups to extract the coconut milk.<\/li>\n<li class=\"instruction\">After 15 minutes of pressure cooking the rice, do a quick pressure release.<\/li>\n<li class=\"instruction\">The rice will turn mushy.<\/li>\n<li class=\"instruction\">Add the extracted coconut milk, 2 1\/2 cups. Combine well with the rice.<\/li>\n<li class=\"instruction\">Select Saute Setting, at Normal or Medium temperature.<\/li>\n<li class=\"instruction\">Add salt, combine well.<\/li>\n<li class=\"instruction\">We will have to add 1\/2 more water to thin down the kanji, combine well.<\/li>\n<li class=\"instruction\">Finally, add 1 cup coconut milk.
