This time I ignored the gifts that&#8217;s sold at the stores, instead I gave my man the best gift which said: &#8220;made from my heart&#8221;. I baked this lemon cake for my valentine and it sure did put a sweet smile on his face.<\/p>\n<p>I had made this cake a few years ago for my hubby&#8217;s birthday, we really loved it. I&#8217;d been thinking of making this cake for so long and it finally happened on this Valentine&#8217;s day. It&#8217;s a lemony flavored cake, very refreshing and on the sweeter side. It has a lemon filling and the frosting has lemon flavor as well. Keep aside<\/li>\n<li class=\"instruction\">In a bowl, combine flour, baking powder and salt.<\/li>\n<li class=\"instruction\">In another bowl, cream butter and sugar using an electric hand mixer.<\/li>\n<li class=\"instruction\">Add eggs one at a time, beat til smooth.<\/li>\n<li class=\"instruction\">Add vanilla extract and beat to combine.<\/li>\n<li class=\"instruction\">Beat the flour mixture alternatively with the milk, mix until just incorporated.<\/li>\n<li class=\"instruction\">Pour the batter to the cake pans and bake for 30 minutes or until a fork inserted to the center of the cake comes out clean.<\/li>\n<li class=\"instruction\">Remove the cake from the oven, let cool down for 10 minutes.<\/li>\n<li class=\"instruction\">Flip the cake over a wire rack and cool down completely.<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]Making the lemon filling[\/b]<\/div>\n<ol>\n<li class=\"instruction\">In a saucepan combine cornstarch, lemon juice and lemon zest till smooth without lumps.<\/li>\n<li class=\"instruction\">Add sugar and butter, cook over medium heat stirring continuously and let come to a boil.<\/li>\n<li class=\"instruction\">Beat the egg yolks using a whisk, add a few tablespoons of the cooked lemon mixture to the beaten egg yolk, combine well.<\/li>\n<li class=\"instruction\">Pour the beaten egg yolk to the lemon mixture in the saucepan, stir the mixture rapidly. Reduce the heat to low and stir continuously till the mixture turns thick. Don&#8217;t boil the mixture.<\/li>\n<li class=\"instruction\">Pour the mixture to a glass bowl. Press a plastic wrap over it to prevent skim from forming when it cools down<\/li>\n<li class=\"instruction\">Let it cool down and refrigerate it for 2 hours.<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]Making frosting[\/b]<\/div>\n<ol>\n<li class=\"instruction\">In a large bowl, beat the confectioners sugar, butter, lemon juice and lemon zest till smooth<\/li>\n<li class=\"instruction\">Pour the milk, beat at high speed till the frosting turns light and fluffy. Keep aside.<\/li>\n<\/ol>\n<div class=\"ERSeparator\">[b]Assembling the cake[\/b]<\/div>\n<ol>\n<li class=\"instruction\">I made a 2 layer cake. (If you want you could make a 4 layer cake, if so cut each cake into halves and layer them, also double up the lemon filling to spread over each layer).<\/li>\n<li class=\"instruction\">Spread the lemon filling over one of the cakes, place the other cake over it.<\/li>\n<li class=\"instruction\">Cover the cake evenly with frosting.<\/li>\n<li class=\"instruction\">Refrigerate the cake for an hour or so.<\/li>\n<li class=\"instruction\">I decorated the cake with yellow colored fondant.<\/li>\n<li class=\"instruction\">Dust the surface with confectioners sugar and roll the fondant over it.<\/li>\n<li class=\"instruction\">I made many heart shapes and many small rounds out of the fondant.<\/li>\n<li class=\"instruction\">I also made long ribbons, cut the ribbons using a ruler for precise measurement.<\/li>\n<li class=\"instruction\">Wrap the sides of the frosted cake with the ribbon.<\/li>\n<li class=\"instruction\">Place one of the heart shapes on the middle of the cake.<\/li>\n<li class=\"instruction\">Place the small rounds around the heart shape.<\/li>\n<li class=\"instruction\">Cut the other heart shape fondants into halves horizontally.
