Wishing all my readers and food loves out there a happy and blessed New year!<\/p>\n<p>Let&#8217;s all resolve to be a much better human being by not hurting others feelings, helping the needy, by showing compassion and kindness and by making this world a better and safe place to live in!!!<\/p>\n<p>Here is an easy and delicious eggplant stir fry, this can be served as a vegetarian side dish for lunch or dinner.<\/p>\n<p><strong>Eggplant Stir fry<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11869\" title=\"eggplant stir fry\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/12\/eggplant-stir-fry.jpg\" alt=\"\" width=\"475\" height=\"317\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/12\/eggplant-stir-fry.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/12\/eggplant-stir-fry-300x200.jpg 300w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/12\/eggplant-stir-fry-84x55.jpg 84w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>For marination:<\/strong><\/p>\n<ul>\n<li>Eggplant, small round ones- 10, halved<\/li>\n<li>Chili powder- 1 tsp<\/li>\n<li>Turmeric powder- 1\/4 tsp<\/li>\n<li>Ground pepper- 1\/2 tsp<\/li>\n<li>Salt- to taste<\/li>\n<\/ul>\n<p><strong>Other ingredients<\/strong><\/p>\n<ul>\n<li>Oil- 3 tbsp for shallow frying eggplants<\/li>\n<li>Oil- 1 tbsp while cooking<\/li>\n<li>Onions, cut thin and long- 2, medium<\/li>\n<li>Curry leaves- 1 sprig<\/li>\n<li>Tomatoes, chopped- 2<\/li>\n<li>Cilantro, chopped- 2 handful<\/li>\n<li>Salt- to taste<\/li>\n<li>Chili powder- if needed add according to your spice level<\/li>\n<\/ul>\n<p><strong>Preparation<\/strong><\/p>\n<ul>\n<li>Cut the eggplants into halves lengthwise and marinate with the above mentioned ingredients &#8220;for marination&#8221;, keep aside for 10 minutes.<\/li>\n<li>Place a large non-stick pan over medium heat, add 3 tbsp oil, place the marinated eggplants in oil and pan fry it till it turns golden brown in color.
