I’d been wanting to make something out of the roasted red peppers that I’d bought a few weeks ago. Last weekend, I did some experimentation with it. Made a sauce out of it, while making the sauce I added peanut butter which made a great difference in taste and flavor of the sauce. I became a slave of this sauce.

I used canned roasted red peppers, it was in a vinegar/salt/sugar solution. I drained the liquid and just used the red pepper, since it was soaked in vinegar the sauce had a slight tangy taste and I absolutely loved it. After making the sauce, I added baked small potatoes in the sauce and cooked it. A terrific dish that can be served as a side or can be combined with pasta as well. How I love roasted red peppers!

Roasted red pepper and peanut butter sauce

Ingredients

To puree

Roasted red peppers, canned- 3, drained

Peanut butter- 3 tbsp

Soy sauce- 1 tbsp

Chili paste- 1 tsp (or add chili powder)

For cooking

Olive oil- 1 tbsp

Dried basil- 2 tsp

Salt- to taste

Instruction

If using canned roasted red peppers, drain the liquid.

In a blender puree the above mentioned ingredients to a smooth paste.
