Lately, I am not that keen about fried snacks, so the other day made this pan fried corn fritters. I&#8217;ve not been into major cooking these days, though cooking helps me to relax, sometimes if I&#8217;m stuck with other thoughts I cannot focus much in cooking. So, after my defense which is on Tuesday, I&#8217;ll be back on track. On wednesday, our best friends from Chicago are visiting us to celebrate their lil girl&#8217;s 5th birthday. So, obviously I&#8217;m planning to make a fondant cake for her and Yes, lots of cooking as well. Looking forward to my defense and our friends visit.<\/p>\n<p>Last weekend, I was watching Food network and I came across this simple recipe for making corn fritters. As it was very easy to make and I had a few corns in my freezer, I made it right away and enjoyed with a cup of coffee.<\/p>\n<p><strong>Corn Fritters<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11525\" title=\"corn fritters\" alt=\"\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/corn-fritters1.jpg\" width=\"475\" height=\"317\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/corn-fritters1.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/corn-fritters1-300x200.jpg 300w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/corn-fritters1-84x55.jpg 84w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Corn kernels, scraped from the cob- 2 fresh corns or use canned corn kernels drained and dried using paper towel<\/li>\n<li>Egg- 1<\/li>\n<li>Ground pepper- 1\/2 tsp or more if required<\/li>\n<li>Corn flour- 6 to 7 tbsps<\/li>\n<li>Salt- to taste<\/li>\n<li>Cilantro, chopped- 2 handful<\/li>\n<li>Cooking spray to grease the pan or olive oil<\/li>\n<\/ul>\n<p><strong>Instruction<br \/>\n<\/strong><\/p>\n<ul>\n<li>If using fresh corn on a cob, scrape the kernels off the cob using a knife.<\/li>\n<li>In a large bowl, combine corn kernels along with egg, ground pepper, salt and cilantro.<\/li>\n<li>Add corn flour to it to make a thick mixture.<\/li>\n<li>Heat a large non-stick pan over medium heat.<\/li>\n<li>Grease with cooking spray or add 2 tbsps of olive oil.<\/li>\n<li>Take 1 large spoonful of the corn mixture and place it on the oil.<\/li>\n<li>Don&#8217;t crowd them in the pan.<\/li>\n<li>Let the bottom side cook till it turns light golden in color, flip it over and cook till both sides turn golden brown in color.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11526\" title=\"making corn fritters\" alt=\"\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/making-corn-fritters.jpg\" width=\"475\" height=\"317\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/making-corn-fritters.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/making-corn-fritters-300x200.jpg 300w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/making-corn-fritters-84x55.jpg 84w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/li>\n<li>Serve warm with tomato ketchup or you can even have some spicy dipping.<\/li>\n<\/ul>\n<p><strong>Tips:<\/strong><\/p>\n<ul>\n<li>If you want you could add more seasonings like chili powder or paprika, garam masala or even dried herbs like basil, oregano etc.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<div class=\"easyrecipe\">\t<link itemprop=\"image\" href=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/corn-fritters.jpg\" \/>\n<div class=\"item ERName\">Corn Fritters &#8211;
