I&#8217;ve been very busy lately \u00a0and so not able to multi task. As my defense date is nearing, I&#8217;m focusing and worrying more about that. Just to refresh myself, I took a day off today and got the much needed rest. Also, Summer has come to an end and Fall is here. Temperature has dropped down from 30 C to 10 degrees C, I am not enjoying this drop. It&#8217;s going to take a couple of weeks to get accustomed to the change though. The thought of wearing shoes and jackets itself is little depressing to me. However, the moment I see the first snow showers I&#8217;ll turn into a kid and will be seen enjoying the beautiful Winter weather \ud83d\ude42<\/p>\n<p>I made this shrimp and egg brown rice last weekend. I used brown rice instead of white rice as it&#8217;s more healthy than white rice. Added shrimp and also egg to the dish. It was easy to make, tasted delicious and filling.<\/p>\n<p><strong>Shrimp and Egg Brown Rice<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11515\" \/><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>To marinate shrimp<\/strong><\/p>\n<ul>\n<li>Shrimp, deveined- 15, large<\/li>\n<li>Garam masala- 1 tsp<\/li>\n<li>Fennel powder- 2 tsp<\/li>\n<li>Turmeric powder- 1\/8 tsp<\/li>\n<li>Kashmiri red chili powder- 1\/2 tsp<\/li>\n<li>Salt- a few pinches<\/li>\n<\/ul>\n<p><strong>For cooking rice:<\/strong><\/p>\n<ul>\n<li>Brown rice- 2 1\/2 cups<\/li>\n<li>Garam masala- 1\/2 tsp<\/li>\n<li>Salt- to taste<\/li>\n<li>Water- enough to cook it<\/li>\n<\/ul>\n<p><strong>To grind<\/strong><\/p>\n<ul>\n<li>Ginger- 3 cloves<\/li>\n<li>Ginger- 2 inch slice<\/li>\n<li>Green chili-1<\/li>\n<\/ul>\n<p><strong>For cooking<\/strong><\/p>\n<ul>\n<li>Sesame oil- 2 tbsps<\/li>\n<li>Onions, chopped small-2<\/li>\n<li>Green pepper, chopped small- 2<\/li>\n<li>Chili powder or ground pepper- 1\/2 tsp or as needed for spice<\/li>\n<li>Egg, beaten- 2<\/li>\n<li>Soy sauce, low sodium- 2 tbsps<\/li>\n<li>Cilantro, chopped- 2 handful<\/li>\n<li>Green onions, chopped- 2 stalk<\/li>\n<\/ul>\n<p><strong>Instruction<br \/>\n<\/strong><\/p>\n<ul>\n<li>In a bowl, combine shrimp with garam masala, fennel powder, turmeric powder, salt and water in a rice cooker.<\/li>\n<li>Coarsely grind garlic\/ginger and green chili in a blender or grinder.<\/li>\n<li>Place a large pan over medium heat, add sesame oil.<\/li>\n<li>Add ground in which shrimp was marinated, rinse it and add the water to the pan.<\/li>\n<li>Cook the shrimp for a few minutes and let the water dry off.<\/li>\n<li>Add chili powder or ground pepper according to your spice level, don&#8217;t add too much though.<\/li>\n<li>Beat 2 eggs in a small bowl.<\/li>\n<li>Make some room in the pan and add the beaten egg to it, as it starts to cook scramble it and
