Exactly, that&#8217;s what avial is all about, you get to enjoy a variety of veggies in one dish. This is a traditional vegetarian dish in Kerala and is also one of the prominent side dishes in Sadya. I&#8217;ve already posted the <a href=\"https:\/\/www.thasneen.com\/cooking\/how-to-make-sadya-or-keralas-flavorful-veggie-palatte-onam-sadya-recipes\/\" target=\"_blank\" rel=\"noopener\">recipe for making avial\u00a0<\/a>in my Sadya blog post, for making that I&#8217;ve added yogurt to impart the sourness.<\/p>\n<p>However, in this recipe, I&#8217;ve added raw mango instead of yogurt. Mixed veggies along with raw mango and coconut, a very simple, humble yet delicious vegetarian side dish to enjoy with rice.<\/p>\n<p><strong>Avial with Raw Mango<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11495\" title=\"avial-with raw mango\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/avial-with-raw-mango2.jpg\" alt=\"\" width=\"475\" height=\"317\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/avial-with-raw-mango2.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/avial-with-raw-mango2-300x200.jpg 300w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/avial-with-raw-mango2-84x55.jpg 84w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>Carrot, cut into thin 3-inch wedges- 2, large<\/li>\n<li>Cucumber, deseeded and cut into thin 3-inch wedges-1<\/li>\n<li>Eggplant, diced- 1, small<\/li>\n<li>Ash gourd, cut into thin wedges- Half of 1 ash gourd<\/li>\n<li>Raw plantain, cut into thin 3-inch wedges- 1<\/li>\n<li>Drumstick, 3 inch long- 10 pieces<\/li>\n<li>Green chilies halved vertically- 2<\/li>\n<li>Turmeric powder- 1\/2 tsp<\/li>\n<li>Curry leaves- 1 sprig<\/li>\n<li>Water- 1\/2 cup<\/li>\n<li>Raw mango, diced- 1\/2 of the mango (or depending on the sourness of the mango)<\/li>\n<\/ul>\n<p><strong>To Grind:<\/strong><\/p>\n<ul>\n<li>Coconut grated- 1 cup<\/li>\n<li>Cumin seeds- 1 tsp<\/li>\n<li>Small onions, chopped- 4 or 1 large shallot<\/li>\n<li>Curry leaves- 1 sprig<\/li>\n<\/ul>\n<p><strong>Other Ingredients:<\/strong><\/p>\n<ul>\n<li>Coconut oil- 2 tbsp<\/li>\n<\/ul>\n<p><strong>Instruction<br \/>\n<\/strong><\/p>\n<ul>\n<li>In a saucepan or clay pan, cook all the above-mentioned veggies <strong>except raw mango<\/strong> along with green chilies, turmeric powder, and curry leaves in 1\/2 cup water, until the veggies just turn slightly soft. Keep it aside for sometime.<\/li>\n<\/ul>\n<div><strong>Tips:\u00a0<\/strong><\/div>\n<div>\n<ul>\n<li>The raw mango I used was very sour, so half of the raw mango was enough.
