It would have been nice if very weekend is a long weekend \ud83d\ude42 Am I greedy??? Well, I am looking forward to my\u00a0defense, which is after 2 weeks, so have been busy with the preparations. I am also enjoying the last few weeks of my campus life. I don&#8217;t think I&#8217;ll ever get bored of campus life, it&#8217;s so much fun and lively.<\/p>\n<p>I usually make casseroles with ground beef, this time I used chicken instead. Topped the cooked chicken with mashed potatoes, garnished with cheese and baked it. It was delicious and filling.<\/p>\n<p><strong>Chicken and Mashed Potato Casseroles<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11462\" title=\"chicken mashed potatoes casserole\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/chicken-mashed-potatoes-casserole1.jpg\" alt=\"\" width=\"475\" height=\"713\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/chicken-mashed-potatoes-casserole1.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/09\/chicken-mashed-potatoes-casserole1-133x200.jpg 133w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>For making Mashed Potatoes<\/strong><\/p>\n<ul>\n<li>Potatoes- 4, large<\/li>\n<li>Water- to cook potatoes<\/li>\n<li>Milk- 1\/2 cup<\/li>\n<li>Ground pepper- 1\/2 tsp<\/li>\n<li>Salt- to taste<\/li>\n<\/ul>\n<p><strong>For cooking chicken<\/strong><\/p>\n<ul>\n<li>Chicken, boneless breasts- 4 breasts, cut small<\/li>\n<li>Oil- 2 tbsp<\/li>\n<li>Onion, chopped small- 2<\/li>\n<li>Green pepper, chopped small- 2<\/li>\n<li>Mixed veggies, cut small- 1 cup (carrots, beans, corn)<\/li>\n<li>Ground pepper- 1\/4 tsp<\/li>\n<li>Italian seasoning- 1\/2 tsp<\/li>\n<li>Oregano, dried- 1\/2 tsp<\/li>\n<li>Basil, dried- 1\/2 tsp<\/li>\n<li>Tomato sauce, low sodium- 1 1\/2 cups<\/li>\n<li>Worcheshire Sauce- 1 tbsp (optional)<\/li>\n<li>Salt- to taste<\/li>\n<\/ul>\n<p><strong>Other ingredients:<\/strong><\/p>\n<ul>\n<li>Cheddar cheese- to garnish<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Instruction<br \/>\n<\/strong><\/p>\n<ul>\n<li>Peel the skin off the potatoes.<\/li>\n<li>Take the potatoes in a large pan, cover with water and cook till it&#8217;s cooked well. Turn on the broiler mode to low in the oven, transfer the casserole on the top rack in the oven and broil for 1 to 2 minutes till cheese gets golden brown in color.
