Too many happenings and too many things to worry about, I honestly wish if I could control the traffic jam in my mind. Though I wish I could sit idle, I don&#8217;t think I would enjoy being idle. Yes, grass is always greener on the other side. Anyway, I just can&#8217;t stop loving all the happenings.<\/p>\n<p>I love eggplant and I love sesame seeds, so I combined them both. The crunchy and nutty sesame seeds really enhanced the taste of this dish. Eggplant when cooked turns mushy, yet it tastes delectable to me. I love the bite of the seeds in it and this is one of the dishes I make often whenever I get the eggplant craving.<\/p>\n<p><strong>Eggplant roast with sesame seeds<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-11153\" title=\"eggplant roast with sesame seeds\" alt=\"\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/07\/eggplant-roast-with-sesame-seeds.jpg\" width=\"475\" height=\"713\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/07\/eggplant-roast-with-sesame-seeds.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/07\/eggplant-roast-with-sesame-seeds-133x200.jpg 133w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Oil- 3 tbsp<\/li>\n<li>Mustard seeds- 2 tsp<\/li>\n<li>Cumin seeds- 1 tsp<\/li>\n<li>Red dry whole chili- 2<\/li>\n<li>Onion, chopped- 1 large<\/li>\n<li>Salt- to taste<\/li>\n<li>Tomatoes, chopped- 2<\/li>\n<li>Eggplant diced, Japanese variety- 3 (use any variety)<\/li>\n<li>Chili powder- 3\/4 tsp<\/li>\n<li>Ground Cumin &#8211; 1 tsp<\/li>\n<li>Fennel powder- 1 tsp<\/li>\n<li>Turmeric powder- 1\/8 tsp<\/li>\n<li>Cilantro, chopped- 2 handful<\/li>\n<li>Roasted sesame seeds- 3 tbsp<\/li>\n<\/ul>\n<p><strong>Instruction<br \/>\n<\/strong><\/p>\n<ul>\n<li>Heat a large non-stick pan, add oil and let it turn hot.<\/li>\n<li>Add mustard seeds and let it splutter.<\/li>\n<li>Add cumin seeds and dry red chili, saute for a second.<\/li>\n<li>Add chopped onions and little salt, cook till it turns slightly translucent.<\/li>\n<li>Add tomatoes and cook covered till it&#8217;s mashed up.<\/li>\n<li>Now, add diced eggplants and combine well.<\/li>\n<li>Cook covered till eggplants turn tender. If it&#8217;s sticking to the bottom of the pan, add some water and cook.<\/li>\n<li>Add chili powder, ground cumin, turmeric powder and fennel powder to the cooked eggplant, combine well.<\/li>\n<li>Taste and add more salt and chili powder according to your needs.<\/li>\n<li>Let cook for some more time.
