On those days, pasta really comes to rescue me. Pasta is a very flexible ingredient and it gets along with almost anything. Just a simple seasoning or load it with meat or make it creamy and cheesy or make into a salad, pasta wouldn&#8217;t disappoint you. The other day, I had way too much cherry tomatoes in my refrigerator and I wanted to finish them up before it got spoiled. I combined cherry tomatoes and pasta, a quick and delicious vegetarian dinner was ready in no time.<\/p>\n<p><strong>Cherry Tomato Pasta<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Olive oil- 1 tbsp<\/li>\n<li>Garlic, chopped- 2 cloves<\/li>\n<li>Shallots, chopped thin &amp; long- 5<\/li>\n<li>Salt- 1 tsp<\/li>\n<li>Italian seasoning or dried oregano- 2 tsp<\/li>\n<li>Cherry tomatoes- 20<\/li>\n<li>Tomato sauce, low sodium- 1\/2 cup<\/li>\n<li>Parsley, chopped- 2 handful<\/li>\n<li>Pasta, cooked<\/li>\n<\/ul>\n<p><strong>Instruction<br \/>\n<\/strong><\/p>\n<ul>\n<li>Cook the pasta in boiling water seasoned with salt.<\/li>\n<li>Drain the water and keep aside.<\/li>\n<li>Place a large non-stick cooking pan over medium heat, add olive oil.<\/li>\n<li>Add chopped garlic and saute till light golden in color.<\/li>\n<li>Add shallots and 1\/2 tsp salt.<\/li>\n<li>Saute till shallots turn light golden in color, shallots will cook faster, don&#8217;t brown it.<\/li>\n<li>Add Italian seasoning and combine well.<\/li>\n<li>Add cherry tomatoes, cover, and cook for a few minutes.<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-10499\" title=\"making-cherry tomato pasta\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/03\/making-cherry-tomato-pasta1.jpg\" alt=\"\" width=\"475\" height=\"317\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/03\/making-cherry-tomato-pasta1.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/03\/making-cherry-tomato-pasta1-300x200.jpg 300w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/03\/making-cherry-tomato-pasta1-84x55.jpg 84w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/li>\n<li>Don&#8217;t mash up the tomatoes, it should turn tender but not fully cooked.<\/li>\n<li>Add tomato sauce, combine well;
