I adore the sweetness, spiciness and mild sourness of this dish. To make this dish colorful, I&#8217;ve added green and red pepper. The chicken was turned into fritters and stir-fried along with veggies and pineapple. Any dish will turn awesome with chicken fritters. Made a simple sauce with pineapple juice and soy sauce, added that while stir-frying; this dish couldn&#8217;t get any better.<\/p>\n<p>Sharing my version of pineapple chicken. I warn you it&#8217;s can get super addictive.<\/p>\n<h3><strong>Cooking video<\/strong><\/h3>\n<p><iframe loading=\"lazy\" title=\"The Best Tasting Succulent Pineapple Chicken-  Easy Pineapple Chicken - Stunning Fall Colors\" width=\"800\" height=\"450\" src=\"https:\/\/www.youtube.com\/embed\/64jlHhaNwjM?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/p>\n<p><strong>Pineapple Chicken<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-26086\" src=\"http:\/\/www.thasneen.com\/cooking\/wp-content\/uploads\/2012\/02\/Chinese-style-Pineapple-Chicken.jpg\" alt=\"\" width=\"475\" height=\"713\" srcset=\"https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/02\/Chinese-style-Pineapple-Chicken.jpg 475w, https:\/\/thasneen.com\/cooking\/wp-content\/uploads\/2012\/02\/Chinese-style-Pineapple-Chicken-133x200.jpg 133w\" sizes=\"auto, (max-width: 475px) 100vw, 475px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong>For marinating chicken<\/strong><\/p>\n<ul>\n<li>Chicken breast, diced- 2 breasts<\/li>\n<li>Soy sauce- 1 tbsp (low- sodium)<\/li>\n<li>Rice vinegar- 1\/2 tbsp<\/li>\n<li>Salt- 1\/4 tsp<\/li>\n<li>Ground black pepper- 1\/4 tsp<\/li>\n<\/ul>\n<p><strong>For making the batter<\/strong><\/p>\n<ul>\n<li>Corn starch- 1\/2 cup<\/li>\n<li>All-purpose flour or gluten-free flour- 1\/2 cup<\/li>\n<li>Baking soda- 1\/2 tsp<\/li>\n<li>Salt- 1\/2 tsp<\/li>\n<li>Ground black pepper- 1\/4 tsp<\/li>\n<li>Water- 3\/4 cup<\/li>\n<\/ul>\n<p><strong>For frying chicken<\/strong><\/p>\n<div>\n<ul>\n<li>Oil- enough for deep frying<\/li>\n<\/ul>\n<p><strong>For making sauce<\/strong><\/p>\n<ul>\n<li>Pineapple juice- 1\/2 cup<\/li>\n<li>Soy sauce- 1 tbsp<\/li>\n<li>Chili paste or sambal-oelek- 1 tsp<\/li>\n<li>Ground black pepper- 1\/4 tsp<\/li>\n<li>Corn starch- 1 tbsp<\/li>\n<\/ul>\n<\/div>\n<p><strong>For Stir Frying<\/strong><\/p>\n<ul>\n<li>Sesame oil- 2 tsp<\/li>\n<li>Oil used for frying chicken- 1 tbsp<\/li>\n<li>Ginger, chopped- 1 tbsp<\/li>\n<li>Garlic, chopped-\u00a0 1 tbsp<\/li>\n<li>Onion- 1, diced<\/li>\n<li>Green pepper- 1, diced<\/li>\n<li>Red pepper- 1, diced<\/li>\n<li>Pineapple diced- 1 cup (use fresh or 1 canned pineapple chunks)<\/li>\n<li>Soy Sauce- 1 tbsp<\/li>\n<li>Ground black pepper- 1\/2 tsp<\/li>\n<li>Green onions, chopped- 2 stalks<\/li>\n<li>Salt- 1\/4 tsp<\/li>\n<\/ul>\n<p><strong>Instruction<\/strong><\/p>\n<ul>\n<li>If you are using canned pineapple, drain the juice and save the juice- add this juice for making the sauce.<\/li>\n<li>I&#8217;ve used fresh pineapple, made 1\/2 cup juice by pureeing 5 diced pineapple with 1\/2 cup water.<\/li>\n<li>Season the chicken with the above-mentioned ingredients &#8220;for marinating chicken&#8221; and keep aside for 15 minutes.<\/li>\n<li>In a large bowl, combine the ingredients for making the batter, add only enough water to make a thick batter- I&#8217;ve added 3\/4 cup water.<\/li>\n<li>Heat a frying pan and add enough oil to fry the chicken.<\/li>\n<li>Coat the chicken in the batter and fry in the oil without crowding them. Fry in batches.<\/li>\n<li>Transfer the fried chicken to a paper towel and keep aside.<\/li>\n<li>In a bowl, combine the ingredients for making the sauce.<\/li>\n<li>Heat a wok, add sesame oil and oil used for frying chicken.<\/li>\n<li>Add ginger and garlic, saute till golden in color.<\/li>\n<li>Add onion, saute for a few minutes.
