Easy Tomato Chicken

- Chicken, boneless- 2 breasts or thighs
- Chili powder- 1 tsp
- Turmeric powder- ¼ tsp
- Cumin powder- 1 tsp
- Coriander powder- 2 tsp
- Garam masala- ½ tsp
- Salt- 1 tsp
- Coconut oil- 2 tbsp
- Ginger, minced- ½ tbsp
- Garlic, minced- ½ tbsp
- Shallots, sliced- 4 or 1 onion
- Curry leaves- 1 sprig
- Tomatoes, chopped- 2, large
- Tomato paste- 2 tbsp
- Salt- ½ tsp
- Cilantro, chopped- ¼ cup
- Combine the chicken with the above-mentioned 'for marination ingredients', keep aside for 15 minutes.
- Place a large pan over medium heat, add oil, add ginger-garlic. Saute till golden in color.
- Add shallots or onion & curry leaves, season with ½ tsp salt.
- Cook till shallots or onions turn translucent.
- Add tomatoes, cook till it gets mashed up.
- Add the marinated chicken and combine well. Cook covered till the chicken has cooked well.
- Add tomato paste, combine well.
- Cook for 3 minutes.
- Have a taste, add more salt if needed.
- Open the lid, cook over high heat & stir fry till chicken turns slightly brown.
- Garnish with cilantro.
- Remove the pan from the heat, keep it covered for a few minutes.
- Serve into a bowl, enjoy with rice, chapati, appam, etc.
