I've used boneless chicken breasts. Half the chicken breasts vertically.
I've added seasonings like ground Allspice, ground black pepper & salt.
Any kind of spices & seasonings can be added.
Spread the spices over the chicken & let marinate for 10 minutes.
Add the marinated chicken to a saucepan, add 2 tbsp water & cook covered till the chicken has cooked well & the liquid has dried off.
Or you can grill or pan fry the chicken.
For making sandwich, my most favourite bread is sourdough bread.
Smear the bread slices with basil pesto spread. Or use any of your favourite spread.
On one of the bread slices, place 2 cooked chicken pieces- if you prefer you can also slightly shred the chicken.
Top the chicken with 4 spinach leaves.
Top with grated cheese. Or use cheese slices.
Close with the other bread slice.
Top the sandwich with chopped butter or spread with melted butter.
I grilled the sandwich on a panini maker, till golden & crispy.
If you don't have a panini maker, you can toast the sandwich on a frying pan placed over medium heat, till both the sides turn golden & crispy.
I highly recommend using sourdough bread for making this sandwich, tastes delish.
