Middle Eastern Salad- With Pomegranate Molasses Dressing

Ingredients
  • Salad greens or Spring mix- 3 cups
  • Red onions, sliced- 1
  • Cucumber, diced- ½ cup
  • Tomato, diced- 1
  • Olives- ½ cup
  • Mint chopped- 2 tbsp
  • Pomegranate seeds- 2 tbsp (optional)
  • Feta cheese, crumbled- ½ cup
  • Cooked chicken, diced- 1½ cups
For making dressing
  • Pomegranate molasses- 2 tbsp
  • Sumac- ½ tbsp
  • Lemon juice- ½ tbsp
  • Olive oil- 2 tbsp
Instructions
  1. For cooking chicken: I've taken 1 boneless chicken breast, dice it & season with ground all spice, ground black pepper & salt. Add the seasoned chicken to a saucepan along with ¼ cup water & cook covered over medium heat till the chicken has cooked well & the liquid has dried off.
  2. To a large bowl, add the salad greens, veggies & cooked chicken.
  3. In a bowl, combine the ingredients for making the dressing.
  4. Just before serving, drizzle the dressing over the salad and toss gently to coat all the ingredients.
  5. Garnish with feta cheese.
  6. Enjoy this zesty and refreshing salad as a side dish along with chicken, fish, etc.
