Instant Wheat Appam With Fermented Batter- Kerala Recipe

Ingredients
  • Wheat flour- 1 cup
  • Cooked rice- ½ cup (or add soaked flattened rice)
  • Grated coconut- ¼ cup
  • Sugar- 1 tbsp
  • Instant dry yeast- 1 tsp
  • Salt- ½ tsp
  • Oil- ½ tbsp
  • Lukewarm water- 2 cups
Instructions
  1. For making the batter, you can add either cooked white rice or Kerala matta rice.
  2. If you don't have cooked rice & have flattened rice or poha or aval: soak ½ cup flattened rice in ½ cup water, soak for 5 minutes.
  3. To a blender jar, add all the ingredients.
  4. If adding flattened rice, add the soaked flattened rice to the blender jar after straining the water from it.
  5. Grind to a smooth batter.
  6. Pour the batter to a large bowl.
  7. Let ferment for an hour.
  8. After an hour, the batter will have doubled in size & bubbles will appear.
  9. Place an appam pan over medium heat.
  10. Grease the pan with oil.
  11. Pour a large spoonful of the batter, swirl the pan & let the batter coat evenly on the pan.
  12. If the batter is too thick, you can add 2 to 3 tbsp of water to make it thin.
  13. Close with the lid & cook for a few minutes.
  14. Open the lid, the edges will turn golden & crispy, will resemble a lace & the center will be soff.
  15. Using a spatula gently take the appam off the pan & transfer to a plate.
  16. This wheat appam has to be enjoyed while it's hot, along with your favourite curry.
  17. If you don't have an appam pan, you can make this in a regular pan.
  18. Place a non-stick pan over medium heat, grease with oil.
  19. Pour a large spoonful of the batter onto the pan & using the back of the spoon gently spread the batter.
  20. This will be similar to making small dosas.
  21. Don't have to close the pan with the lid, cook for a fe minutes till the appam has cooked well & turns golden in color.
  22. While serving for kids, pour coconut milk & sprinkle some sugar on it.
