Ingredients
  • Japanese Eggplant or brinjal- 2, diced or sliced
  • Chili powder- 1 tsp
  • Turmeric powder- ⅛ tsp
  • Salt- 1 tsp
  • Coconut oil- 3 tbsp
  • Curry leaves- 10 leaves
Instructions
  1. I've taken 2 Japanese eggplants, dice or slice them.
  2. To a bowl, add the eggplant & add the chili powder, turmeric powder & salt, combine well.
  3. Place a pan over medium heat, add coconut oil.
  4. Add the seasoned eggplant & curry leaves, pan fry till golden brown.
  5. Transfer to a plate lined with kitchen paper towel.
  6. Enjoy as a side dish with rice.
