Pan fried eggplant-brinjal

- Japanese Eggplant or brinjal- 2, diced or sliced
- Chili powder- 1 tsp
- Turmeric powder- ⅛ tsp
- Salt- 1 tsp
- Coconut oil- 3 tbsp
- Curry leaves- 10 leaves
- I've taken 2 Japanese eggplants, dice or slice them.
- To a bowl, add the eggplant & add the chili powder, turmeric powder & salt, combine well.
- Place a pan over medium heat, add coconut oil.
- Add the seasoned eggplant & curry leaves, pan fry till golden brown.
- Transfer to a plate lined with kitchen paper towel.
- Enjoy as a side dish with rice.
