Ingredients
  • Coconut oil- 2 tbsp
  • Mustard seeds- 1 tsp
  • Dried red chilies, halved- 2
  • Curry leaves- 10 leaves
  • Shallots, chopped- 3 large shallots or 6 small/pearl onions
  • Okra or lady's finger- 2 cups, cut into round slices
  • Water- ¼ cup
  • Turmeric powder- ¼ tsp
  • Cumin powder- ½ tsp
  • Chili powder- ½ tsp
  • Salt- 1½ tsp
Instructions
  1. I've used frozen okra- cut into rounds available in Indian stores. Rinse the frozen okra in water.
  2. Place a saucepan over medium heat.
  3. Add coconut oil, let turn hot.
  4. Add mustard seeds, let splutter.
  5. Add dried red chilies & curry leaves.
  6. Add shallots or pearl/small onions, season with ½ tsp salt; saute till golden in color.
  7. Add the okra, saute for a few minutes.
  8. Add ¼ cup water & cook till the okra turns soft.
  9. Add chili powder, turmeric powder, cumin powder & salt, combine well.
  10. Stir fry over high heat till the okra turn slightly browned.
  11. Take the pan off the heat & keep it covered for a few minutes.
  12. Enjoy as a side dish along with rice.
