Ingredients
  • Boneless chicken, diced- 2 chicken breasts
  • Garlic, chopped- 1 tbsp
  • Ginger, chopped- ½ tbsp
  • Dried red chili flakes- 1 tsp
  • Tomato ketchup- ¼ cup
  • Pineapple juice- ½ cup
  • Pineapple, chunks- 1 can
  • Red or orange pepper, diced- 1
To garnish
  • Cornstarch slurry- 1 tbsp
  • Green onions, chopped- ¼ cup
Instructions
  1. I've taken boneless chicken breast, dice them into chunks.
  2. In the stainless steel pot, dump all the ingredients. Combine well.
  3. Close the pot with the lid.
  4. Select the pressure cook setting, set the time to 5 minutes at high pressure.
  5. After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
  6. Open the lid.
  7. Chicken will be perfectly cooked & there will be some liquid in the pot.
  8. If you prefer you can thicken the gravy with cornstarch slurry & cook in saute setting for 2 minutes.
  9. I skipped adding cornstarch slurry.
  10. Serve in a bowl. Garnish with chopped green onions.
  11. Enjoy this delicious sweet & sour chicken with steamed rice.
