Instant Precision Dutch Oven Rice Pilaf

Ingredients
  • Ghee or clarified butter- 1 tbsp
  • Dried bay leaves- 2
  • Mixed veggies- 1½ cups
  • Homemade Spice mix- 2 tbsp
  • Salt- 1½ tsp
  • White basmati rice, rinsed- 1½ cups
  • Water- 3 cups
For making the spice mix
  • Ground coriander seeds- 2 tbsp
  • Cinnamon powder- 1½ tsp
  • Ground black pepper- 1½ tsp
  • Ground cardamom- 1½ tsp
  • Ground allspice- 1½ tsp
  • Turmeric powder- 1½ tsp
  • Ground cloves- 1 tsp
  • Ground nutmeg- ¾ tsp
Instructions
  1. I've used white basmati rice, take the rice in a strainer & rinse under running water. If you prefer you can soak the rice in water for 15 minutes.
  2. I made a homemade spice mix that I use for making Middle Eastern dishes.
  3. In a bowl, combine all the above-mentioned spices. This can be stored in an air-tight container.
  4. Keep the cooking pot in the cooker base.
  5. Click on Manual mode, click twice to select Mode 2, set the temperature to 300 F & time 30 minutes, click start.
  6. After preheating, the display will show add food.
  7. Add ghee, dried bay leaves, saute for a few seconds.
  8. Add mixed veggies chopped small. I've added beans, corn & carrots.
  9. Saute for 2 minutes.
  10. I've added 2 tbsp of the spice mix. Any kind of spices, or seasonings can be added.
  11. Combine well.
  12. Add the rinsed basmati rice, combine well.
  13. Add water, instead of water you can also add chicken stock.
  14. Add salt, combine well.
  15. Close the pot with its lid.
  16. I reduced the temperature to 250 F & set the time to 15 minutes & click start.
  17. After 15 minutes, fluffy & soft rice pilaf will be ready.
  18. Enjoy with the slow-cooked pot roast.
