Ingredients
For pressure cooking
  • Red lentil, rinsed- 1 cup
  • Onion, chopped- 1
  • Carrot, chopped- 1
  • Potato, chopped- 1
  • Ground cumin- ½ tsp
  • Turmeric powder- ½ tsp
  • Ground black pepper- ¼ tsp
  • Salt- 1½ tsp
  • Chicken, vegetable stock or water- 4 cups (if adding water, add 1 chicken bouillon cube)
For topping
  • Lemon juice
  • Paprika
Instructions
  1. This is a dump & go recipe, so don't have to saute the veggies.
  2. For making a large batch, double or triple the recipe.
  3. Turn on the Instant Pot.
  4. To the stainless steel pot, dump all the ingredients mentioned for pressure cooking.
  5. Chicken or vegetable stock can be added.
  6. If adding water, also add 1 chicken bouillon cube.
  7. Combine well, close the pot with the lid.
  8. Select pressure cook setting, set the time to 10 minutes at high pressure.
  9. After pressure cooking, let the pressure release naturally for 5 minutes & then do a quick pressure release.
  10. Open the lid, combine well.
  11. Potatoes added will make this soup thick & creamy along with the red lentil taste delicious.
  12. Serve in soup bowls.
  13. Add ½ tsp freshly squeezed lemon juice & sprinkle paprika.
  14. Enjoy this comforting & hearty soup with pita bread or pita chips.
