Low Carb Healthy Recipe | Pan Fried Chicken In Tomato Mushroom Sauce With Parmesan Zucchini Noodles

Ingredients
For making pan fried chicken
Boneless chicken breasts- 2
Paprika- 1 tsp
Ground black pepper- ¼ tsp
Dried herb seasoning- 1 tsp
Salt- ¾ tsp
For making tomato mushroom sauce
Olive oil- 1 tbsp
Garlic, chopped- 2 tbsp
Shallots, sliced- 4 (or add 1 onion)
Mushroom, sliced- 1½ cups
Tomato paste- 3 tbsp (or add ½ cup tomato sauce)
Dried oregano- 1 tsp
Paprika- 1 tsp
Water- ¼ cup
Salt- 1 tsp
For making parmesan zucchini noodles
Fresh zucchini- 3
Olive oil- ½ tbsp
Dried chili flakes- ½ tsp
Ground black pepper- ⅛ tsp
Paprika- ½ tsp
Salt- ½ tsp
Parmesan cheese- ¼ to ½ cup ( +2 tbsp to garnish)
Instructions
I've taken 2 boneless chicken breasts, for making more take more chicken.
Add all the seasonings mentioned 'for marinating the chicken', spread well.
Let marinate for 15 minutes.
Place a cast iron skillet over medium heat, add ½ tbsp olive oil.
Place the marinated chicken on the pan, cook over low-medium heat.
Flip over & cook till both sides have turned golden brown & the inside has cooked through.
Transfer the chicken to a plate & keep them covered.
I've used the same pan for making the sauce.
Using a wooden spatula, scrape off the particles stuck to the pan.
Add olive oil.
Add garlic, saute till golden in color.
Add shallots, season with ½ tsp salt, stir fry till shallots turn golden in color.
Add mushrooms, cook for 2 minutes.
Add tomato paste, dried oregano & paprika, combine well; cook for a minute.
Add water, combine well.
Add ½ tsp more salt.
Place the pan fried chicken on the sauce, cover the chicken with the sauce.
Cook for 2 minutes.
Remove the pan from the heat, keep it covered.
Making Parmesan Zucchini Noodles
Peel the skin off the zucchinis.
I've used a spiralizer to make spirals or noodle shapes out of the zucchini.
Or use a peeler & peel the zucchini lengthwise.
Place a wide pan over medium heat.
Add oil, add dried chili flakes, saute for a few seconds.
Add the zucchini noodles, gently combine well.
Cook for 3 minutes till zucchini turns soft.
Don't over cook the zucchini, will turn mushy.
Add ground pepper, paprika & salt, combine well.
Finally, add parmesan cheese, combine well.
Remove the pan from the heat.
On a plate, serve the zucchini noodles, spread some tomato mushroom sauce & top with pan-fried chicken.
Garnish with parmesan cheese.
