Instructions
To a blender jar, add all the ingredients mentioned for grinding, grind to a smooth paste.
In a large bowl, add all the ingredients for making the marinade, combine well.
Add the ground green paste to the yogurt marinade, combine well.
I've taken 8 chicken legs, any bone-in chicken pieces can be used.
Using a sharp knife, add lines on the chicken flesh.
Add the chicken to the marinade, combine well.
Cover the bowl, let marinate for 2 hours or overnight the better.
After 2 hours of marination, I've air-fried the chicken in the Instant Pot air fryer.
If you don't have an air fryer, bake in the oven at 400 F for 20 minutes or grill on a pan over the stovetop till the chicken turns golden brown.
Place the stainless steel pot into the main pot, place the air fryer basket in the pot & the broil tray in the air fryer basket.
Grease the broil tray with oil.
Place the marinated chicken on the broil tray.
Keep aside the marinade left in the bowl.
Close the Instant Pot with the Air Fryer lid.
Select Air Fry, temperature 400 F, time 20 minutes.
After 20 minutes, take the chicken out of the air fryer. Transfer to a plate.
For cooking the gravy, I’ve used Instant Pot.
Can be also cooked in a non-stick saucepan over medium heat.
Select saute setting on the Instant Pot, medium temperature. Let the stainless steel pot turn hot.
Add oil, whole cardamom, dried bay leaves & peppercorns, saute for a minute.
Add the marinade or the white sauce, cook for a few minutes till it’s reduced to half.
Add the air-fried chicken to the gravy, combine well & cook till the gravy thickens & is coated on the chicken.
Garnish with cilantro, combine well.
Remove the pot from the main pot.
Serve in a bowl.
Enjoy this aromatic, rich, creamy & succulent Afghani chicken with rice, naan, or roti.
