Instant Pot Asparagus-Red Lentil Healthy Soup- Dump & Go Recipe

Ingredients
Onion, chopped- 1
Garlic, chopped- 2
Asparagus, chopped- 9
Red lentil, rinsed- 1 cup
Ground cumin- 1 tsp
Paprika- 1 tsp
Ground black pepper- ½ tsp
Dried Oregano- 1 tsp
Salt- 1½ tsp
Water or Chicken stock or Veggie stock- 3 cups
Green onions, chopped- ¼ cup
Cilantro, chopped- 2 tbsp
Instructions
Chop off the tough ends from the asparagus & roughly chop the asparagus.
Into the stainless steel pot, add all the ingredients except green onions & cilantro.
Instead of water, chicken stock or veggie stock can be added.
Close the pot with the lid.
Select pressure cook setting, set time to 5 minutes at high pressure.
After 5 minutes of pressure cooking, do a quick pressure release.
Combine well.
Using a hand blender, coarsely puree the soup. Or transfer to a blender jar & puree coarsely.
Garnish with green onions & cilantro.
Serve into soup bowls, sprinkle paprika over the soup.
Enjoy with pita chips or bread.
