Chia Seeds- Vermicelli Healthy Falooda- Easy Ramadan Dessert

- Chia seeds- 2 tbsp
- Coconut milk, thick- ½ cup
- Water- ¼ cup
- Thin vermicelli- 1 cup, roasted
- Milk- 1½ cups
- Condensed milk- 2 tbsp
- Ground cardamom- ¼ tsp (Optional)
- Rooh Afza or Rose syrup or Maple syrup- 2 tbsp
- Candied dried fruits or Tutti Frutti- 1 tbsp
- Mixed Fruits
- Chopped Nuts
- Cherries
- In a bowl, combine chia seeds along with coconut milk & water. (I've used thick coconut milk ½ cup, hence added ¼ cup water to thin it down).
- Instead of coconut milk, you can also add milk or water.
- Soak the chia seeds in coconut milk overnight.
- The next morning, chia seeds will plump up & will be soaked well.
- Place a saucepan over medium heat, add 1½ cups milk.
- Add 1 cup thin roasted vermicelli (roughly broken).
- Add condensed milk, combine well.
- Add ground cardamom, this is optional. Or add a few strands of saffron.
- Cook for 5 minutes till vermicelli has turned soft.
- Remove the pan from the heat, let cool down.
- Into a tall glass, first, add 2 tbsp chia seeds.
- Top with 3 tbsp sweetened vermicelli.
- Pour 1 tbsp roof afza or rose syrup or maple syrup or honey.
- Top with candied dried nuts, more chia seeds, mixed fruits & nuts.
- Top with 2 cherries and finally drizzle 1 tbsp rooh afza or rose syrup or maple syrup or honey.
- Enjoy, this can be chilled and will taste even more delicious.
- This recipe will make 2 servings, for making more increase the amount of ingredients accordingly.
Thin roasted vermicelli is available at Indian & Middle Eastern stores. Or you can add thick 2 inch slice vermicelli.
