Into a bowl, combine the fish pieces with the spices mentioned 'for marinating fish". Let marinate for 10 minutes.
Turn on the Instant Pot, select Saute setting at Normal temperature. Let Hot sign display.
Add ½ cup oil, let oil turn hot.
Add the fish pieces and pan fry for a few minutes, flip over and let both the sides turn light golden in color. No need to deep fry the fish.
Transfer the pan fried fish to a plate lined with paper towel. Keep aside.
Into the same oil, add onions; season with ½ tsp salt. Cook for 2 minutes.
Add grated ginger-garlic, green chilies and curry leaves, saute for 2 minutes.
Add tomatoes, cook for 4 minutes till tomatoes are mashed up.
Make sure the bottom of the pot doesn't turn brown, if required add 3 tbsp water to deglaze the bottom of the pan & scrape off any particles stuck to the pan.
Add coriander powder and ground black pepper. Combine well.
Add the pan-fried fish, gently combine to the cooked onions & tomatoes.
Add coconut milk, cook for 2 minutes.
Taste and add ¼ to ½ tsp salt as per your needs.
Gently combine everything.
Remove the stainless steel pot from the main pot and keep covered for sometime.
This goes well with rice, appam, idiyappam, chapati, etc. Enjoy!
Notes
Instead of Salmon, you could add king fish, pomfret, sardines or any fish that's not too soft and that will break apart.
