Easy Bhatura Recipe without Yeast- Popular Indian Fried Bread

Ingredients
For Making Dough
All purpose flour- 1½ cups
Baking powder- ¼ tsp
Baking soda- ⅛ tsp
Salt- ¼ tsp
Sugar- 1 tsp
Oil- 1 tbsp
Yogurt- ¼ cup (plain & unflavoured)
Water- ½ cup
Other Ingredients
Ghee
Oil- enough for frying bhatura
Instructions
To a large bowl, add all the ingredients for making the dough.
Add water little by little to make a smooth dough. I've added total ½ cup water.
For making soft bhaturas, water can be replaced with milk.
Knead well for 5 to 10 minutes till the dough turns soft and smooth. Kneading the dough is very important.
Cover the dough with a damp cloth. Else, the dough will turn hard.
Let proof for an hour. Don't skip this step.
After an hour, knead the dough well, divide into medium sized balls.
Grease a wooden board or clean surface with ghee or oil.
Place the dough ball and flatten the dough using a rolling pin to a round or oval shape.
Place a frying plan over high heat.
Add enough oil for deep frying.
Let oil turn hot, very important oil has to be hot for bhatura to puff up.
Drop the flattened dough to the oil.
Fry for a few seconds.
Gently press the edges using a slotted spoon. The dough will start to puff up. (Watch my cooking video)
Let the bottom side turn golden in color.
Flip it over and let the other side cook and turn golden in color.
Transfer to a plate lined with paper towel.
Repeat with other dough balls.
You will be able to make 6 to 7 bhaturas. For making more, you can double or triple the recipe.
Bhaturas have to enjoyed right away while they are hot.
In North India bhaturas are enjoyed with chole or chickpeas curry, can also be served with chicken, mutton or beef curries, veg stew, etc.
These bhaturas are super soft and will melt into your mouth. YUM!
