Beetroot Burfi- Indian Sweet

- Ghee- 2 tbsp
- Beetroot, grated- 1 cup
- Coconut, grated- 1 cup
- Sugar- ¾ cup to 1 cup
- Cardamom powder- ½ tsp
- Ghee- 1 tsp, to grease the plate
- Place a non-stick pan over medium heat, add 2 tbsp ghee.
- Grate 1 beetroot in a food processor, don't add chopped beets, has to be grated.
- Add grated beetroot, combine well in ghee for 2 minutes.
- Add grated coconut, combine well and roast for 5 minutes till the raw smell of beetroot goes away.
- Add sugar, combine well till the sugar dissolves, keep stirring.
- Add cardamom powder, combine well.
- Cook and stir frequently till the mixture thickens, about 10 to 15 minutes.
- Grease a plate or small pan with ghee.
- Spread the beetroot burfi mixture evenly on the plate and smoothen the top.
- Let cool down for a few minutes, let the burfi set well.
- Using a sharp knife, cut into squares.
