Shrimp in Mint Cilantro Sauce

- Fresh mint leaves- 6
- Cilantro, chopped- ¼ cup
- Green chilies, chopped- 2
- Water- ¼ cup
- Shrimp, deveined- 15 to 20
- Oil- 1 tbsp
- Ginger, chopped small- 2 inch slice
- Garlic, chopped- 2 cloves
- Onion, chopped- 1
- Tomato, chopped- 1
- Soy sauce, low-sodium- 2 tbsp
- Cornstarch- 1 tbsp mixed with 2 tbsp cold water
- Ground pepper- ¼ tsp
- Green onions, chopped- 2 sprigs
- Salt- to taste
- In a blender, grind the fresh mint leaves, cilantro and green chilies along with ¼ cup water to a smooth paste. Keep aside.
- Place a non-stick cooking pan over medium heat, add oil.
- Add chopped ginger and garlic, saute till they turn golden in color.
- Add chopped onion, season with a few pinches of salt, saute till onion turn light golden in color.
- Add chopped tomato, cook for a minute till it's mashed up.
- Add shrimp and cook covered for a few minutes till shrimp turns pink.
- Add the mint-cilantro-green chili paste to the shrimp, combine well and cook till the raw smell goes away for 4 to 5 minutes.
- Add soy sauce, combine well.
- Add ¼ cup water and cook for a minute.
- Add corn starch mixed with water, combine well and let the gravy thicken.
- Taste and add salt if needed.
- Add ground pepper, combine well.
- Finally, garnish with chopped green onions.
- Serve as a main dish or side dish along with rice, roti, noodles etc.
