Easiest Peanut Butter Cookies - Flourless and Dairy Free

Ingredients
  • Peanut butter, smooth- 1 cup
  • Sugar- ¾ cup (Brown sugar or white sugar)
  • Egg- 1
  • Chocolate Chips- 2 tbsp (semi-sweet)
Instructions
  1. Preheat the oven to 350 F or 175 C.
  2. To a large bowl, add the peanut butter, sugar & egg.
  3. Combine all the ingredients using an electric hand mixer till well incorporated, about 2 to 3 minutes.
  4. If you don't have an electric hand mixer, just use a fork and combine well till the mixture turns thick.
  5. I've also tried with ½ cup sugar & the cookies tasted great, so if you like low sugar, just add ½ cup.
  6. If you are adding chocolate chips, add that and combine well using a spatula. Adding chocolate chip is optional. If added cookies taste much more delicious.
  7. Scoop 1 tbsp of the cookie dough, roll it between the palm of your hands and slightly flatten it.
  8. Place on a baking sheet lined with parchment paper.
  9. Place the flattened dough 2 inches apart from each other, as the dough will expand while baking.
  10. To create some patterns: take a fork & press the fork over the cookie dough.
  11. Bake for 20 minutes or till the edges of the cookies turn light brown. Don't over bake them.
  12. Take the baking sheet out of the oven, the cookies will be very soft & crumbly.
  13. Allow the cookies to cool down on the baking sheet for at least 15 minutes, cookies will turn firm & slightly crunchy..
  14. Indulge in these homemade delicious peanut butter cookies.
  15. My favourite way of enjoying these cookies is with Saffron Milk: Take milk in a mug, add 3 strands of saffron, heat the milk in the microwave for a minute. Take it out & add ½ tsp honey, mix well.
  16. This combo tastes delicious, give it a try!
Notes
You can add either Brown sugar or white sugar, brown sugar will make these cookies delicious.
