Shrimp Mushroom Stir Fry in Peanut Butter

- Shrimp, de-veined- 15
- Corn starch- 1 tbsp
- Ginger-garlic paste- ½ tbsp
- Ground pepper- ½ tsp
- Sesame seeds- ½ tbsp
- Salt- ½ tsp
- Oil, used for frying shrimp- 2 tbsp
- Ginger, minced- 2 inch
- Garlic, minced- 2 cloves
- Dry red chili flakes- ½ tsp
- Small onions, chopped- 10
- Mushrooms, sliced- 8 oz
- Peanut butter- 2 tbsp
- Soy sauce- 2 tbsp (use low-sodium)
- Green onions, chopped- 2 stalks
- Sesame oil-1/2 tsp
- Marinate the shrimp with the above mentioned ingredients "for marinating shrimp" for 10 minutes.
- Shallow fry the shrimp in oil. Keep aside.
- Place a wok or pan over medium heat, add 2 tbsp oil used for frying shrimp.
- Add minced ginger and garlic, saute till light golden in color.
- Add dry red chili flakes, saute for a couple of seconds.
- Add small onions and saute till it turns golden in color.
- Add mushrooms and stir fry till lightly browned.
- Add the fried shrimp to the mushrooms, stir fry for a minute.
- Add peanut butter and combine well.
- Add soy sauce and stir fry for a minute.
- Taste & add salt if required.
- Add green onions and stir fry for a few seconds.
- Finally, add sesame oil, stir fry for a couple of seconds.
- Serve as an appetizer or as a side dish.
