Potato Broccoli In Caramelized Onion Gravy

- Olive oil- 2 tbsp
- Onions, chopped- 3
- Garlic, chopped- 3 cloves
- Salt- to taste
- Italian seasoning- 2 tbsp
- Water- ¾ cup
- Potatoes, diced- 4
- Broccoli florets- 1, small
- Ground black pepper- 1 tsp
- Parsley, chopped- 1 handful
- Salt- to taste
- Place a large pan over medium heat, add olive oil.
- Add chopped onions and a little salt, saute till translucent.
- Add garlic and Italian seasoning, saute till onions start to turn caramelized. Don't over brown it.
- In a blender, puree the onions along with ¾ cup water to a smooth paste. Keep aside.
- In a saucepan cook diced potatoes along with ¼ cup till it turns fork tender.
- Add broccoli to the cooked potatoes and cook covered for a few minutes till broccoli has just cooked. Don't over cook broccoli.
- Pour the pureed caramelized onion to the cooked potatoes and broccoli, combine well.
- Add some water to thin down the gravy.
- Add ground black pepper and more salt to taste, combine well and cook for a couple of minutes.
- Sprinkle parsley over it and cook for a minute.
- Remove the pan from the heat and keep covered.
- You could serve this with chapati or roti or combine with pasta of your choice to make a one pot meal.
