Spinach and Cheese Folded Omelette

- Eggs- 2
- Spinach, chopped- ¼ cup
- Milk or cream- 2 tbsp
- Ground pepper- 2 pinches
- Salt- a few pinches
- Cheddar cheese, grated- ¼ cup
- Butter or Olive oil- ½ to 1 tbsp
- In a small bowl: beat eggs, spinach, milk, ground pepper and salt using a whisk.
- Place a non-stick pan over medium heat.
- Add butter or olive oil.
- Pour the beaten eggs over the pan and cook for 3 minutes.
- Sprinkle cheese over the omelette and cook for 2 minutes.
- Once the cheese starts to melt, fold the omelette using a spatula.
- Gently flip it to the other side and cook over low heat for a couple more minutes.
- Slide the omelette to a plate and serve with toasted bread or bagels.
For a healthier version, use only egg whites.
