During Ramzan fasting season, one dish I look forward to while breaking the fast is Creamy Rice soup. There are different ways of making this. Here I am posting a quick and easy recipe, which is a really comfort soup not just for Ramzan, but for any time.
Ingredients:
- Rice-3/4 cup
- Fenugreek seeds-1tsp
- Garlic minced-1tsp
- salt-1/2 tsp
- Water-2cups
Boiling the Rice:
- Boil the rice in water with all the above ingredients in a pressure cooker.
To grind:
- Coconut shredded( fresh or frozen)-1cup
- Cumin seeds-1tsp
- Turmeric powder-1/2 tsp
Coconut milk-1cup
Salt-as required
Water- 1+cups
Preparation:
- Grind the shredded coconut with cumin seeds and turmeric powder along with 1 cup of water.
- Pour the grinded mixture into a strainer to get the coconut milk out of it and pour the liquid to the cooked rice.
- Mix well, add the coconut milk and add enough water to make it into a soup consistency.
- Heat the mixture, but don’t over boil the soup.
- Add more salt based on your needs.
- Serve hot in a soup bowl with pickle of your choice.
